Mom's Meatloaf

For those that ate at my Mom's house growing up you might know that her most famous meal and the family's all time favorite is her meatloaf recipe. It may sound strange but my Mom's meatloaf has apples in it, trust me it's good. While my mom was visiting this weekend together we prepared a meatloaf to cook for dinner this week. Since it's always such a big hit I thought I would share Susan's Famous Meatloaf recipe which I plan to make for my family for dinners to come in the future as well. It's such an easy dinner to make, make sure you serve it was some delicious homemade mashed potatoes, corn and biscuits to complete Susan's meal.


Susan's Meatloaf Recipe
Ingredients
1 can tomato sauce
¼ cup Karo Light Corn Syrup
2 eggs
1 cup chopped apple
½ cup bread crumbs
½ cup chopped onion
1 tsp salt
½ tsp nutmeg
½ tsp pepper
1 ½ lb ground beef
2 Tbsp prepared mustard (we usually omit this)
*Bacon (optional)

Directions
For juicer meat loaf – In a small bowl mix 1 can (8 oz.) tomato sauce, ¼ cup Karo Light Corn Syrup and 2 Tbsp prepared mustard. In a large bowl mix ¾ cup of the tomato mixture, 2 eggs slightly beaten, 1 cup finely chopped and peeled apple, ½ cup fine dry bread crumbs, ½ cup chopped onion, 1 tsp salt, ½ tsp ground nutmeg, ½ tsp pepper. Add 1 ½ lb ground beef; toss to blend. In 11” x 7” baking dish form beef mixture into loaf; (Optional) For more taste, add raw bacon strips across the top of the meatloaf once shaped. Bake in 350 degrees oven for one hour covered with tin foil, followed by one hour without the foil.
