Double R Rocks This One

I'm not a huge Rachael R fan, I mean her parents didn't even spell Rachel the good way, but her initial's are double R, which I do appreciate.... Anyway, I haven't made too many of her recipes, but I did make a great one tonight for dinner, her 30 minute Shepherd's Pie and it was awesome!

It was super simple to make, had healthy ingredients and was on the table in 30 minutes (obviously). This is one of those recipes that I could see being great for when we have kids and you want a quick weeknight meal. I simplified the recipe even more by using instant potatoes. I highly recommend giving this one a shot, it had great flavor from the gravy in it so it was moist and delicious with the vegetables cooked into the meat.

30 Minute Shepherd's Pie

Ingredients
2 pounds potatoes, such as russet, peeled and cubed
2 tablespoons sour cream or softened cream cheese
1 large egg yolk
1/2 cup cream, for a lighter version substitute vegetable or chicken broth
Instant Potatoes!

Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 3/4 pounds ground beef or ground lamb
1 carrot, peeled and chopped
1 onion, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup beef stock or broth
2 teaspoons Worcestershire, eyeball it
1/2 cup frozen peas, a couple of handfuls
1 teaspoon sweet paprika
2 tablespoons chopped fresh parsley leaves

Directions
Boil potatoes in salted water until tender, about 12 minutes. Drain potatoes and pour them into a bowl. Combine sour cream, egg yolk and cream. Add the cream mixture into potatoes and mash until potatoes are almost smooth.

While potatoes boil, preheat a large skillet over medium high heat. Add oil to hot pan with beef or lamb. Season meat with salt and pepper. Brown and crumble meat for 3 or 4 minutes. If you are using lamb and the pan is fatty, spoon away some of the drippings. Add chopped carrot and onion to the meat. Cook veggies with meat 5 minutes, stirring frequently. In a second small skillet over medium heat cook butter and flour together 2 minutes. Whisk in broth and Worcestershire sauce. Thicken gravy 1 minute. Add gravy to meat and vegetables. Stir in peas.

Preheat broiler to high. Fill a small rectangular casserole with meat and vegetable mixture. Spoon potatoes over meat evenly. Top potatoes with paprika and broil 6 to 8 inches from the heat until potatoes are evenly browned. Top casserole dish with chopped parsley and serve.

My Future Niece

Last weekend I got to see one of my best friends in the world. My very good friend, Kristin, is expecting a little girl! And very soon I will be an aunt to my first little niece, Olivia. I'm so excited for her to make her appearance in this world. I can't wait to meet her!

Spring is Coming

I couldn't resist these beautiful tulips when I saw them in Whole Foods yesterday. I loved the beautiful yellow and orangey/red coloring to them. It's also a sign that spring is coming. I wanted to take them outside on the deck to take pictures of them. It was a perfect excuse to play around with my camera and practice shooting in manual. I also thought the beautiful colors of the flowers would be a great contrast against all the dead trees and snow outside.


Crazy Good Cupcakes

Gina brought over dessert for us last night for our dinner. She brought the most amazingly good, crazy delicious cupcakes. She made pina colada cupcakes that were to die for! It had coconut flakes in them (which of course coconut is the way to my heart) and like a rum cake taste, they were so moist and delicious. I took pictures of the leftovers, it's surprising there even are still leftovers. I fully intend to eat another one of these cupcakes tonight even if it means I have to skip dinner. As soon as I get the recipe from her I'll be sure to post it!

Gluten Free Dinner

We had our friends Joe and Gina over last night for dinner. Gina is on a gluten free diet so I knew I had to pick something to make to accomodate this. I have to be honest I had no idea what being gluten free entailed and I had to do some research, I found out that it means that she can't eat things like white flour. I finally settled on making fish for dinner. I had caught an episode of a Bobby Flay show on the Food Network months ago and book marked the recipes since I thought they looked so good. For dinner I made "Grilled Tilipia with Lemon Butter and Capers" along with "Grilled Asparagus with Green Peppercorn Vinaigrette" accompanied by some brown rice. Both recipes came out fantastic and I got rave reviews!

I wish I had taken some pictures since it came out so good but I know I'll be making these again so I'll have to take some next time. I was impressed with myself on this one, it was my very first time even attempting a tilipia recipe, it was so simple! Both recipes called for cooking the food on the grill but I just baked them in the oven and it turned out just as good. It was the perfect meal to make for serving for company since you can make the dressings ahead of time and just pour over them when you are ready to cook them.

Grilled Tilipia with Lemon Butter and Capers

Ingredients
1 lemon, finely zested
2 lemons, juiced
1/2 cup dry white wine
1 shallot, thinly sliced
Splash heavy cream
1 stick unsalted butter, cut into cubes, at room temperature
Salt and freshly ground black pepper
4 (8-ounce) tilapia fillets
3 tablespoons olive oil
1/2 pound orzo, cooked al dente
1/4 cup chopped fresh flat-leaf parsley leaves
1/4 cup drained capers

Directions
Combine the lemon zest, juice, wine and shallot in a small saucepan over high heat and cook until reduced by half. Remove from the heat and let cool. Whisk together the cream, butter and wine mixture in a small bowl and season with salt and pepper. Cover and refrigerate for 30 minutes. The lemon butter can be made 1 day in advance and refrigerated. Bring to room temperature before serving.

Heat the grill to high. Brush the fish on both sides with the oil and season with salt and pepper. Grill the fish for 3 to 4 minutes per side or until lightly golden brown and slightly charred. Toss the orzo with a few tablespoons of the lemon butter and 2 tablespoons of the parsley and season with salt and pepper. Transfer the orzo to a platter. Remove from the grill and immediately place the fillets on the orzo and top each fillet with some of the lemon butter and capers. Garnish with the remaining parsley.

Grilled Asparagus with Green Peppercorn Vinaigrette

Ingredients
3 tablespoons white wine vinegar
2 teaspoons Dijon mustard
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup plus 2 tablespoons extra-virgin olive oil
2 tablespoons green peppercorns in brine, drained
1 pound fresh asparagus, trimmed
2 tablespoons canola oil

Directions
Whisk together the vinegar, mustard, salt and pepper in a small bowl until combined. Slowly whisk in the olive oil until emulsified and stir in the peppercorns. Let the vinaigrette sit at room temperature for 15 minutes before serving. Vinaigrette can be made up to 8 hours in advance and refrigerated.

Heat the grill to high.Toss asparagus with the canola oil and season with salt and pepper. Grill until tender, about 5 to 7 minutes. Place grilled asparagus on a platter and drizzle the vinaigrette over the top.

Idina is Simply Spectacular!

As part of my Christmas present to my Mom, I bought her tickets to go see Idina Menzel perform with the NY Philharmonic. We had seen her perform two years ago at the Tilles Center and she was simply amazing then so when I saw this one night only concert coming around I knew I had to get tickets.

Seeing her perform at Avery Fisher Hall at Lincoln Center with the NY Philharmonic was nothing less breathtaking. It was amazing at how many talented individuals, especially her, were involved in this special performance. From the moment she walked out in a beautiful white gown, barefoot I might add, she opened the concert with the song "Life of the Party" which I have on my iPod and it sounded incredible in person. She sang so many wonderful songs, from our all time favorite broadway showed Wicked (where she won the tony away) "Defying Gravity" to songs from Rent like "No Day but Today."

One of the most fun songs she sang though had to be Lady Gaga's "Poker Face" that she sang on Glee with Lea Michele. She joked with the NY Philharmonic during the performance by saying right in the middle of the song, "Hey you guys, don't you feel that you've arrived, playing this song?" She even joked about the lyrics by making some painfully perplexed faces, though, at the lyrics she was singing: "I'm bluffin' with my muffin," for example, or "stunnin' with my love-glue-gunning."

Every song she sang seemed to be more amazing from the last song. She has one of the most amazing voices I have ever heard in my entire life and is truly talented. We loved every single minute of the entire concert, she is one performer that does not disappoint!

Taking Care of a Puppy

Having a puppy is a ton of work! I think I may have underestimated exactly how much work and time would be entailed with getting a puppy. That being said it's completely worth it and I know when he gets older it will be so much easier. Whoever said that having a puppy was good training for having a baby was definitely right. If a puppy is this much work I can't even imagine how much work a baby is. While it is extremely gratifying to take care of such a lovable little creature it is also a lot of work. I knew before I got Rocky that it would be a lot of work and didn't expect it to be easy. I was prepared for cleaning up accidents in the house, and training the dog, and being home to feed him and take him out after. I don't think I was prepared for the amount of time and energy that it would take and also some of the other puppy traits I had overlooked.

It's hard to believe that Rocky has been here with us for over two weeks already and yet it feels so much longer than that. He's certainly changed my daily routine, especially in the morning. Rocky now wakes up promptly at 6:30 am and begins his barking to be let out of his crate. Unfortunately for him and me I let him keep crying till after 7, I'm hoping he'll be smart enough to realize that 7 is a more acceptable wake up time than 6:30. After that I spend the next hour or so sitting on our tiny kitchen floor with him while he plays and wait forever for him to do his business.

I love coming home to the furry little guy. He's so lovable and it's fun to watch him run around and play with all his toys. It's not as much fun though when he thinks that we are his toy and he tries to chew on us with his extremely sharp puppy teeth. I can't wait for him to out grow that one!

I could go on and on about Rocky and how he's changed our lives and how much fun he is! Although Mike doesn't always think it's for the better, he's having a hard time adjusting to him. But I know he loves him! I know I certainly do.

Lofty Travel List

I'm realizing that I have quite an extensive list of places I want to travel to before we think about having kids. There's so many good places on my list. Some that I have been to already and want to go back to (with Mike) and others that I've never been to. On my short list of places I want to go to in the near future include:
  1. Ireland 
  2. Washington DC 
  3. Chicago 
  4. Napa Valley
  5. Italy 
  6. Possibly a cruise 
  7. Oktoberfest, Munich & Prague
If I covered all of those I would be quite a happy person. A couple of them are only short weekend trips so I'm optimistic we could do those it's just a matter of logistics and planning. Now if only I could find the time, vacation days, and money to pay for all these trips we'll be set. Oh and getting Mike on board with going on all of them too!

Ready for Baseball Season

Rocky got a gift in the mail today from his Uncle Carmen, Aunt Dawn & Jayden. They sent him his very own Yankee jersey. His Daddy was very excited about this outfit and even helped dress him up in it right away. Now Rocky can watch the baseball games with his Dad in style and help root for his favorite team!

My Puppy

I am so excited, I still can't believe that I got a puppy of my own. Although it still doesn't feel completely real because he isn't home with me yet. He is at his Grandma's house until Thursday so I am getting daily updates from her on all the cute things he has been doing.

I want to proudly introduce our puppy. He is a "shihpoo" which is a shitzu-poodle mix, one of those designer hybrid dogs. He is hypoallergic and doesn't shed. He's three months old now, and was born on Halloween. He's about 7/8 pounds right now and I like that he will be a 'hearty' 15 pounds when he is full grown which I think will be a nice size.

I think we finally settled on calling him Rocky. Mike liked this name because it's kind of a tough name which is ironic because he's so sweet, he's part poodle which is why Mike thought it was funny. He also referenced it to his brother's all time favorite movie, Rocky, of course. My favorite though was tonight when I was talking to our friend Carmen he goes "and it was a Rocky road to getting him," I couldn't help but laugh at that one.

I really can't wait to go pick him up and bring him home on Thursday. I already ordered a child gate to keep him in the kitchen and start preparing for his arrival.

My Very Own Puppy!

After A LOT of begging and pleading with Mike, he finally gave in and caved and said it was ok for me to get a puppy. I know he's not really very happy about it but none the less he let me finally get the puppy I have been dreaming about for so long. No really, I must look for puppies almost daily and then try to pick out cute accessories (not clothes) but water bowls and things. I have been wanting a puppy for so long and now I finally got one. I know Mike must REALLY love me to be doing this for me, but I know he won't regret it.

My Mom and I just can't resist going to the Puppy store, so when I was home of course we had to go. Especially since I have still be thinking of the last puppy I saw there two weeks before the wedding. I know some people say not to get a dog from the pet store, but someone's gotta buy them. I know they say it is taking a risk since you don't know where the dog came from but it's a risk I was willing to take, there's no guarantees in life with anything (except for death and taxes). Plus even with a breeder there's no guarantees either sometimes.  (Thankfully so far he seems to be doing ok after getting a clean bill of health tonight from the vet)

Anyway as soon as my Mom and I saw him we were instantly in love. We knew we couldn't leave him there and were thinking about him all day. I called and pleaded with Mike but he was NOT having it, and did not want to even entertain the idea, I had all but given up hope. At this point my Mom was even thinking she would get him because he was just too cute to pass him by. I had resigned to the fact I wasn't getting my puppy and went back to Jersey where at first I was greeted by a cranky Mike. You could imagine my shock and surprise when he told me that I could get the puppy if I really wanted him and it would make me happy. I was delighted by this news.

So off my parents went back to the pet store to go bring home our new puppy, he is staying at my parents house until Thursday, since I had a work event that I had to stay overnight for on Monday and Tuesday and then school on Wednesday. I have been waiting anxiously for Thursday night to come so we can go to Long Island and pick up my puppy! I can't wait to bring him home. His Grandma though is quite enjoying having him there though!
