Epic Icing Failure

After the success of my first batch of Car Bomb Cupcakes for St. Patrick's Day last year, I convinced Bridget to make them with me this year. She was more than happy to try and make the delicious cupcakes I had raved about. Having learned from last year these are quite the complicated multi-step process so we decided to spend our Sunday afternoon in the kitchen, Gabriella was going to supervise us, as we often need supervision the two of us.

We started off pretty strong making the chocolate cake foundation with the Guinness, then hollowed them out, of course sampling the pieces we took out, and added the chocolate ganache center with baileys in it. We were looking good up until this part, however that's when we went a bit off our game. We proceeded to make the icing with Bridget diligently mixing the confectioner sugar with the butter, while Gabriella and I supervised Mommy's mixing. Somewhere along the line we must have gone wrong, maybe we didn't mix our icing long enough or put enough butter or something in it.

When it came time to ice the cupcakes we realized we were in trouble. I had planned to put the icing in a piping bag and squeeze the icing out on the cupcakes so they'd look pretty, that didn't work out so well, it wouldn't squeeze out. Then we resorted to icing them the traditional way with a knife, only our white icing mixed in with the chocolate ganche center and we found up with 'dirty' looking frosting. These cupcakes were in no way, shape, or form, pretty to look at, but boy did they sure taste good. These do not go down as our best decorated dessert but they certainly go down as a delicious tasting treat, maybe by next year we'll get it down, but no one had any complaints about the taste, that's for sure!

no wonder we needed her to supervise us, she'll be making better cupcakes than us in no time! 
Not the prettiest looking but once you taste them you won't care what they look like!
