To go along with my chicken I found two other recipes to try, baked onion rings and cheddar biscuits. The onion rings were difficult to bread, the crumbs got went and clumpy and it was hard to get a lot on them. I don't think mine turned out that great. I'm not sure I would attempt them again even to just use up some buttermilk. The second recipe I tried were cheddar and green onion biscuits. These biscuits were extremely easy to make. I thought they were quite tasty but I didn't get too much feedback from Mike on the entire dinner, he was cranky that night, but I thought they were good. I'd make those again if I had leftover buttermilk in the house.
Low Fat Baked Onion Rings

1 medium onion, sliced into 1/4 inch rings
2 1/4 cups low fat buttermilk
1/2 cup panko bread crumbs
1/4 cup Italian seasoned whole wheat bread crumbs
1/4 cup crushed corn flake crumbs
salt to taste
olive oil baking spray (I used my Misto)
Place slices of onion in a shallow dish. Pour the buttermilk over the top and let them soak for about 1 - 2 hours, refrigerated. Preheat oven to 450 degrees. Line baking sheet with parchment paper or foil. Combine panko, bread crumbs and corn flakes and place half of the crumbs in a large dish, season with salt. Reserve the rest for when the first batch is used up. This should help avoid clumping and they should stick better to the onions. Dip each soaked onion ring into the crumb mixture; coat well. Place rings onto two cookie sheets. Lightly spray with oil. Bake about 12 minutes or until golden brown.

1 1/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
4 medium green onions, sliced (1/4 cup)
1/3 cup shredded reduced-fat Cheddar cheese (2 ounces)
3/4 cup buttermilk
3 tablespoons canola or vegetable oil
2 tbsp butter, melted
2 cloves garlic, minced
2 tbsp fresh chopped parsley
Heat oven to 450°. Spray cookie sheet with cooking spray. Mix flour, baking powder, salt, and baking soda in medium bowl. Stir in onions and cheese. Mix buttermilk and oil; stir into flour mixture until soft dough forms. Drop dough by 8 spoonfuls onto cookie sheet. Bake for 10 minutes. Melt butter in a small frying pan, add half the garlic and saute on low heat about 1 minute. Remove from heat and add parsley. Brush or drizzle biscuits with melted butter. Bake for 5 more minutes, or until lightly browned on the bottom. Serve warm.
