St. Patty's Day Traditions

My mom has been making corn beef and cabbage for St. Patricks Day for years now although it's only in recent history I've come to really appreciate this dish and the tradition. Last Sunday, Mike and I journeyed to Long Island for this traditional feast, even my brother came in from Manhattan, none of us wanted to miss Mom's corn beef! 

For the occasion my mom makes not one but two corn beefs.  She gets the regular supermarket brand one and boils that on the stove for hours with all the cabbage and potatoes. The other corn beef is a great cut she gets from Omaha Steaks and she cooks that in the oven. That one is delicious, it's not fatty at all!

Once the corn beefs are ready we started the tradition that I make everyone reuben sandwiches out it. I turn a plain old sandwich roll into garlic bread and toast it and melt the swiss cheese on it before I put the corn beef, and sauerkraut, and mustard for those that want it. The sandwiches are absolutely delicious and we look forward to them every year! This is one tradition I think we'll def be sticking with for years to come. Mom even got Rocky into the festivities.
