Back on the Wagon

This week marked my first "official" return to healthy eating and exercising. Leading up to the wedding I of course went hard core to the gym, going almost every day and giving up almost all food that was bad. I'll admit it, I proudly got down to 112 pounds (I'm only 5 foot tall after all). It was great, more so because I felt god about what I was eating and all my exercising.

Sadly after the wedding I made excuses and lost focus. I had excuse after excuse, first it was the Holidays, then it was the massive snowstorms that kept us inside, also added to the winter was the fact that I was working from home and highly unmotivated to leave the house at the end of the day to go out in the cold. Then it was staying home with Rocky (since at that time Mike wanted nothing to do with him) and of course also finishing my last semester of graduate school was another one.

When I was getting in shape for the wedding of course that was the ultimate goal. I had "the dress" to fit into. I used to say it was like someone was holding a twinkie in front of me when I was running on the treadmill (the twinkie being my dress). After that I def let it fall by the waste side (literally). Now it's time to kick it back in gear. With our cruise coming up I really want to get back into shape for that, especially since none of my Hawaii clothes fit me (or regular clothes for that matter). And also to be healthy too!

I unofficially started counting weight watcher points again, which means eating healthier, and also trying to increase my workouts. I managed to make several fresh-low fat meals this week so I'm off to a good start. My menu for the week included:

Mon - Lemon Feta Chicken served with Orzo with Broccoli
Tues - Vegetable Lasagna
Wed - Beer Soaked Beef with Sweet Potato Fries and Green Beans
Thurs - Spicy Shrimp Fried Rice

My cooking didn't turn out too bad, Mike even ate most of it. Although my sweet potato fries def could've been crispier but I'll give them another shot, and certainly my vegetable lasagna will be staying in the rotation. I'm looking forward to trying more recipes going forward and also working towards my goal of eating more organic and unprocessed foods (on my 30x30 list). I'm optimistic I'll be back in shape before the cruise in no time! Now if only I could get Mike to follow along too.....
